Paola Juliana Trujillo and her father have come a long way, rebuilding their farm during a period of great difficulties from commerce to high-quality specialty coffee.
Taste profile: very sweet and vibrant coffee of natural anaerobic processing with an outstanding tropical profile. Juicy citrus acidity. Sweet, long-lasting fruity aftertaste and rounded body.
Ripe berries with an index of 20 Brix are harvested. Coffee is disinfected with hydrosulfate and sent to fermentation with yeast for 90 hours. After fermentation, the berries are sorted and the coffee is sent to dry in the sun for 6 days, and then brought to the optimal moisture level in guardiola.
Paola Juliana Trujillo was born in Pescador, a beautiful little coffee paradise located north of the Cauca department, where she grew up surrounded by the quiet natural landscapes of her father's Patio Bonito coffee farm.
Paola enrolled at Manizales National University to study chemical engineering. It was a difficult experience at first because she was away from her family. After graduating from university, she worked for several months at a soap factory. But work did not bring joy, the purpose of life was not obvious, and Paola's grandmother died at home, leaving her father alone. And Paola decided to return home.
She offered to manage the farm during that year's harvest, not even imagining that this offer would change her life. Gradually, she learned the daily activities of the farm and got to know a lot of neighbors who invited her to their farms and gave her a lot of tips on practicing on Bonito's Patio.
The first year was a disaster because the prices were very low and the quality of the coffee was poor. They had only one option: "reinvent Bonito's Patio." The way forward was through a coffee rush. Then they contacted the coffee company, which helped them take the first steps to improve the quality.
Paola had the opportunity to work with many producers in Cauca, Huila and Narino, which further enriched her experience in the coffee industry.
Paola finds it wonderful to share experiences, learn from others and grow together. These interactions gave her the most important reason to love her job. With each meeting, she had a new opportunity to motivate the coffee shop workers to work in groups, focusing on sustainable productivity and quality. She is very happy because she has discovered a new perspective on the sale of coffee, seeing the hope for better well–being in the eyes of farmers and their families - a feeling that she considers invaluable.
Paola returned to her farm a year ago, and they are working hard to improve the quality and offer the best coffee. Her father, Carlos Arturo Trujillo, has been growing coffee for 40 years and says, "It's been a long journey, but in the end it's been very satisfying."
He enjoys the unconditional support of his family in improving coffee making processes.
The farm covers an area of 11 hectares, of which 9 hectares grow 45,000 coffee trees of various varieties, including Castillo, Columbia, Bourbon Rosado, Gesha, Bourbon Ahi, Bourbon Cider, SL28, WushWush, Tipica (Lychee) and Laurina. Trujillo's team is passionate about finding quality and paying attention to detail in all aspects of the farm. Patio Bonito's entire business is based on four fundamental principles: food safety, agroforestry, sustainability and quality.
The farm's mission is to "provide alternatives and training to farmers and students in the management, conservation, and exploration of natural resources and the environment." The family philosophy is: "The best legacy we can leave to our children is love, knowledge, and a planet to live on."
Colombia is the world's third largest producer of coffee and the second largest producer of Arabica grown on the slopes of the Andes. Main regions: Armenia, Medellin, Tolima, Caldas, Kindia, Cauca, Popayan, Nariño, Huila, Antioquia. The climate in the lowland areas is humid tropical, in the mountains at an altitude of more than 1200 meters above sea level, the temperature during the day varies from 18 to 24 ° C. The rainy season lasts from April to July and from October to November. Soils are rich in minerals, volcanic.

Store the coffee beans in a dry place without direct sunlight and grind immediately before cooking. It is best in our zip-fastener pack or in a jar with a vacuum function. Remember: oxygen is the main enemy of coffee, especially if it is ground in advance. If you are going away for a long time, coffee can be frozen once in the freezer.
