Espresso - бленд или моносорт сезонного кофе традиционной для страны обработки и ботанической разновидности, обжаренный для ценителей эспрессо и молочных напитков.

Seasons - это сезонный кофе традиционной для страны обработки и ботанической разновидности. Основа кофейной традиции страны, собранный чаще всего из одного региона. Узнаваемый вкус, постоянство и баланс.

Estate - это кофе от фермера, с которым мы знакомы, и о котором рады рассказать вам. Такой кофе выращен, собран и обработан одними руками на одной земле с высокой степенью ответственности и стремления к совершенству.

Special - это особенный кофе ввиду самых разных причин. Органический кофе, без кофеина, инфьюз, победители конкурсов и выставок, аукционные лоты - всё здесь.

Berry - наше изобретение. Кофе в дрип-пакетах без кофеина с сублимированной ягодой. Уникальный вкусовой опыт, напиток на каждый день, интересная игрушка на один раз или всё вместе - решать вам.

Spirits- это кофе, выдержанный в бочках из-под рома или виски. Наш совместный проект с пивоварней, который объединил 2 года концентрации вкуса в нечто фантастическое.

Signature - это кофе, ради которого мы занимаемся своим делом. Уникальный, яркий, запоминающийся, не оставляющий равнодушных. Авторские проекты фермеров и наши собственные изыскания.

Country Origin

Первое, что вы узнаёте о кофе - страна произрастания.

Это, конечно, неспроста. Терруар (совокупность географических и климатических особенностей) в совокупности с обработкой и генетикой придаёт кофе особенную вкусовую палитру.

Поэтому мы даже по аромату можем отличить, например, Эфиопию от Индонезии. У каждого есть свои фавориты: кто-то любит Бразилию, а кто-то Кению. Страна скажет далеко не всё о вкусе и характере кофе, но очень многое.

Остальное остаётся за генетикой, обработкой, и, конечно, мастерством обжарщика.

Rwanda
Score

Оценка по 100-балльной шкале, присуждаемая кофе на основании листов оценки по стандартам SCA (Specialty Coffee Association) и CQI (Coffee Quality Institute).

  • От 80 баллов - спешелти кофе (при соблюдении ещё нескольких условий).
  • 90+ баллов - исключительный кофе. Присуждается крайне редко, в массовой продаже практически нет.

Помимо стандартов оценки SCA, существуют стандарты COE - конкурса Cup of Excellence, которые несколько отличаются. Правом оценки наделяется сертифицированный Q-грейдер или судья COE.

Variety

Генетика (ботаническая разновидность кофе) - один из важных факторов, влияющих на вкус кофе.

Марагоджип, гейша, пакамара, типика, бурбон, sl28, катурра, катуаи, кастильо - эти и другие названия вы найдёте на наших упаковках и в описании лотов на сайте.

Размер и форма листа, тип завязи, цвет спелой ягоды, высота куста, размер ягод и зёрен, и конечно вкусовые характеристики - на всё эти влияет разновидность кофе.

Существует более 500 классифицированных разновидностей арабики, активно культивируются более 100. Новые сорта получаются путём естественной мутации и скрещивания фермерами и профильными институтами с целью улучшить вкус, повысить урожайность и устойчивость к болезням и вредителям.

Red Bourbon
Origin

Для описания происхождения лотов мы используем английские слова из-за трудности ёмкого и элегантного перевода.

Single Estate - это кофе от фермера, с которым мы знакомы, и о котором рады рассказать вам. Такой кофе выращен, собран и обработан одними руками на одной земле с высокой степенью ответственности и стремлению к улучшению.

Single Origin - это кофе, собранный из одного региона от разных фермеров станцией обработки или экспортёром (часто в одном лице), который обрабатывает и сортирует кофе, готовя его к отправке.

Blend - это фирменный продукт, который отражает наше видение и предпочтения в кофе. Это кофе более тёмной обжарки под эспрессо и для заваривания в джезве (турке), и это не обязательно "смесь" в привычном понимании.

Single Origin
Roast

Мы подбираем профиль обжарки индивидуально для каждого лота исходя из множества уникальных особенностей зерна: разновидности, обработки, урожая, текущей влажности и активности воды в зерне.

В последние годы у обжарщиков хорошего кофе вы всё чаще можете встретить два стиля обжарки:

  • Эспрессо - более тёмная обжарка для профессиональных и автоматических кофемашин. Подойдёт так же и для заваривания в джезве (турке), и любителям более крепкого, плотного и сладкого кофе, который можно заварить во френч-прессе, чашке и дрип-пакете.
  • Фильтр - средняя обжарка, в наибольшей степени раскрывающая энзимный вкусовой потенциал зерна. Подходит для любого способа заваривания, в первую очередь альтернативными способами, но так же подойдёт и для автоматических кофемашин.

Как видите, разную обжарку можно заварить разными способами, и часто результат получится достойным. Эспрессо - не только кофемашина, а фильтр - не только воронка. Именно из-за этого мы не делим кофе на можно/нельзя, а просто хорошо обжариваем хороший кофе.

Processing

Обработка (processing) значительно влияет на вкус кофе. Это комплекс процедур с момента сбора ягоды до окончания сушки зерна.

Growth Height

Высота произрастания кофе является частью важнейшей характеристики - терруара. Терруар - это совокупность географических и климатических особенностей места, где вырос кофе.

Среди них:

  • Число осадков и их источник
  • Химический состав почвы
  • Ветра и солнечные дни
  • Суточные перепады температуры

Именно терруар придаёт зерну уникальные узнаваемые вкусовые ноты, и именно поэтому мы уделяем этому столько внимания.

About the country of growth

The land of a thousand hills.

Rwanda is a small state on the African continent adjacent to Burundi, Tanzania, Uganda and the Republic of the Congo. Rwanda is an agro-industrial country, more than 90% of the population is employed in agriculture, including growing tea and coffee. A temperate and mild climate with two rainy seasons combined with mineral-rich volcanic soil is ideal for coffee plantations.

About processing station

The Kilimbi processing station is located in Nyamasheke County, one of the central coffee producing areas in the country, on the shores of Lake Kivu. The station was founded in March 2016. The station is located at an altitude of 1650 meters above sea level; the height of the neighborhood, from where the berries are brought, reaches 1850 meters. The station employs 4 permanent employees; the station manager is Joseph Ntarindwa.

At the station, the berries are processed in washed, natural and honey ways. With any processing method, the berries are first sorted out by hand, removing any defective, green or overripe, and then placed in tanks of water to separate the floaters from the good ripe berries with a high density. With the natural processing method, the berries are then spread in a thin layer on African beds (usually between 7.00 and 8.00 am, until it is very hot) and dried for 10 days, turning them over every 30 to 40 minutes. At this stage, the berries are covered at particularly hot temperatures to avoid overdrying. Then they are placed in bags and left in the shade for 2 days, which allows fermentation to proceed at their own pace and increase the level of sugars. Next, the berries are again placed on the tables and dried to a standard moisture content of 12.8%. With washed processing, the berries are pulped after soaking and sent to tanks for fermentation, which can last from 8 to 12 hours. The washed fermentation process is always accompanied by a ritual called Ikinimba, literally trampling the grain with your feet, accompanied by chanting. After the fermentation process is over (this is checked by the station manager), the grain is washed and sorted by grades, and then sent to dry on African beds, which can take up to 25 days. When processing hani, the berries are first placed in bags for 24 hours, and then they are laid out on African beds and dried for 32 days. Regardless of the processing, the grain, either in a parchment shell, or in the whole berry, is kept for 30 days before halling and final sorting.
