Sneider Arias Suarez is an experimenter who has mastered complex long-term fermentations perfectly, while maintaining the balance and recognizability of the terroir.
Taste profile: dense sweet coffee of delicate long-lasting anaerobic fermentation with bright alcoholic notes and a fruity bouquet with notes of cane sugar, tropical fruits and cocoa.
After harvesting, the berries are floated to remove foreign objects and potential defective berries. Coffee fermented for 160 hours under controlled conditions to maintain certain bacterial cultures during fermentation. The coffee is then dried first in the guardiola and then in the sun. The total drying time is 10 days.
Sneijder Arias Suarez, originally from Caldas, represents the third generation of a family dedicated to the noble cause of coffee cultivation. About six years ago, Sneider and his wife decided to invest in coffee cultivation in Valle del Cauca and open their own farm, Finca Manzanares.
The El Manzano neighborhood, located in Seville's Valle del Cauca, is home to Finca Manzanares, Sneijder's home and operations center. This space has become a true laboratory of coffee innovation, where diversity and quality are the norm. Sneider allocated special plots for growing exotic coffees, demonstrating his interest in exploring new horizons in the world of coffee, but at the same time retained plots with classic varieties such as Castillo and Columbia. Now Sneider and other farmers from the region are striving to improve the quality of their coffee through experimental treatments and thereby raise their prestige.
Colombia is the world's third largest producer of coffee and the second largest producer of Arabica grown on the slopes of the Andes.
