About the region

This coffee was grown at an altitude of 1400-2000 meters in the Ayarza microregion in the Santa Rosa department. Here, small farms immediately after harvesting sell ripe berries to the Ayarza Cherry Mill processing station, which is located on the border of the departments of Santa Rosa, Xalapa and Hutiapa.

Laguna de Ayarza (Lake Ayarza) is a crater lake in the Santa Rosa Department of Guatemala. It is known as Laguna Azul (Blue Lake). It was formed about 20,000 years ago as a result of a volcanic eruption. The lake is located at an altitude of 1400 meters. According to local legend, the true nature of the lake is much more mysterious, and some believe that it is connected to the ocean, since the actual depth remains unknown. Lake Ayarza is located in a remote location, and access to it is difficult, so the lake and the surrounding area are in pristine condition.

About the country of growth

Guatemala is a charming country with a rich indigenous culture and beautiful landscapes, including 37 volcanoes, some of which are still active. These volcanoes are not only attractive to travelers, but are also a recognizable feature of Guatemalan coffee.

Coffee growing methods are similar to other countries in the region, but Guatemala is distinguished by an abundance of water, volcanic soil and a completely different microclimate compared to its neighbors. Guatemala quickly realized the needs of the emerging speciality coffee sector and responded to them earlier than most coffee-producing regions. Anacafe, the association of coffee producers in Guatemala, identifies seven growing regions: Freihanes, a plateau south of Guatemala City; Coban, a rainforest region in the center of the country; Huehuetenango, a highlands near the border with Mexico; Atitlan, primarily volcanic mountains on the Pacific side of Lake Atitlan; San Marcos, between Huehuetenango and The Pacific Ocean; Oriente, the driest of the growing regions located near the eastern border with Honduras; and the most famous of all, Antigua, located among volcanoes an hour southwest of Guatemala City.

Each bag contains 12 grams of coffee, which allows you to prepare 190-210 grams of the drink. Just put it on a high cup and pour in 92-96 °C water in a thin stream 3 times 70 grams until the water flows completely. You can find more detailed instructions in our article.
