The Inmaculada farm of the Holguin Ramos family pays special attention to the cultivation of exotic types of coffee and their processing to emphasize its terroir. Their goal is to produce the most unusual types of coffee, regardless of the risk and cost. Most of the varieties they grow are incredibly low yielding and difficult to grow, which proves their commitment to their goal.
Taste profile: very sweet and bright coffee with notes of tropical fruits, a mix of mango and papaya. Juicy, bright citrus acidity. Sweet, long-lasting fruity aftertaste and rounded body.
In 2010, the Holguin Ramos family began their coffee journey in Valle del Cauca, Colombia. They have a long history of growing palm oil and sugar cane in Narinho. Ramos started with a planting area of 5.12 hectares, and nine years later they have 50 hectares, which are divided into four farms, each of which has a unique climate. Inmaculada coffee farms are divided into El Jardin, Las Nubes, Montserrat and Inmaculada Concepción. On the farm there is an old Catholic school, which has been converted into a dry mill and a tasting laboratory, with a parabolic greenhouse and a drying system on rotating African beds.
Geshu is grown on the farm. The famous variety of Arabica comes from Ethiopia. This variety has gained worldwide recognition and fame due to its floral aroma and bright fruity taste. In the last few years, Gesha has dominated the world Championships scene, increasing its popularity and accessibility around the world.
If someone was able to move geshu off the pedestal, then this is Rumeh Sudan, known for its resistance to diseases and excellent taste and tactile attributes. This variety is often used as a breeding variety. It was originally discovered in Sudan in the Marsabit Mountains. This is a mutation with bourbon, it is low-yielding and has a bright taste and aroma of tropical fruits, with an incredible body of the drink. Sasha Shestik won together with Rume Sudan at the World Barista Championship in 2015.

To begin with, it's not even the same type as most coffees found on the market today. Coffea Eugenioides is considered one of the parents of modern Arabica coffee. Once upon a time, there was a natural crossing of robusta and eugenioides. This coffee is very difficult to grow, it gives only 150 grams of roasted coffee from one tree. It contains less caffeine than Arabica, so there is almost no bitterness in the coffee. The defining characteristic of this coffee is its incredible sweetness. It has significantly less citrus acidity, which we are so used to in coffee, which gives a completely new look at what coffee can be.
Colombia is the world's third largest producer of coffee and the second largest producer of Arabica grown on the slopes of the Andes. Main regions: Armenia, Medellin, Tolima, Caldas, Kindia, Cauca, Popayan, Nariño, Huila, Antioquia. The climate in the lowland areas is humid tropical, in the mountains at an altitude of more than 1200 meters above sea level, the temperature during the day varies from 18 to 24 ° C. The rainy season lasts from April to July and from October to November. Soils are rich in minerals, volcanic.

Store the coffee beans in a dry place without direct sunlight and grind immediately before cooking. It is best in our zip-fastener pack or in a jar with a vacuum function. Remember: oxygen is the main enemy of coffee, especially if it is ground in advance. If you are going away for a long time, coffee can be frozen once in the freezer.
