Coffee cultivation in Indonesia has a 300-year history, strongly influenced by the colonization of the country by the Dutch. About 92% of the country's production is in the hands of small manufacturers using traditional techniques.Many varieties from here are named after the Gayo ethnic group, living mainly in the northern part of the island of Sumatra.
Sumatran coffee beans are visually distinguishable from grains from other regions — their color is darker (dark green, bluish-dark green). The reason for this is a special treatment for the country — the so-called giling-bass.
About processing
Giging Bass is invented and used in Indonesian Sumatra. In certain stages, it resembles washed and honey, but at the same time it has significant differences. Ripe berries are harvested, depulped with a special device and sent to dry directly in gluten. At this time, gluten fermentation takes place. The sucrose contained in it saturates the grains. A day later, the seeds are washed from gluten residues. Only parchment remains on them. In this form, with a humidity of 50-60%, grain is sold. The following owners dry the grains within 2-3 days. When the humidity of coffee is 20-25%, they are subjected to halling (coffee parchment is removed). The refined grains are sent for final drying to the level of 11-13% percent. At night, the beans are harvested so that the fermentation process does not stop. Upon reaching the required humidity indicator, the coffee is ready for export.
Wet-Hull or Giling-Basah coffee has an original unique taste. A sweet and sour drink with a rich fruity aroma is highly appreciated by professional coffee lovers.
